For the Crepes:
Mix the flour, egg and milk together with an electric mixer or whisk until smooth and lump free. In a large fry
pan add a little butter or coconut oil and pour out enough mixture to cover the pan so the crepe is nice and thin. Cook until browned lightly on both sides and keep them warm in the oven until all the mixture is cooked up.
For the Filling:
Fry up the bacon in coconut oil until crispy and slice the banana. Lay out the bacon and banana inside each crepe, fold over and glaze with maple syrup.
