Grate the pumpkin and fry up slowly in coconut oil until soft. Meanwhile blend all the ingredients for the dressing in a food processor and soak the kelp noodles in hot water. Add the dressing to the cooked pumpkin to warm through and then add the kelp noodles.
I cooked up some organic lamb sausages which I chopped up and added to the noodles. You could add chicken or meat of your choice or eat the noodles as they are.
